- Cucumber 1 stalk (about 200g)
- Eggs 2
- Ham sausage 1 (about 40g)
- Red chili pepper 1 (optional)
- Cooking oil 10ml
- Light soy sauce 3ml
- Salt 2g
Steps
- Wash the cucumber, cut into half-moon slices, set aside
- Cut the ham into half-moon slices, set aside
- Chop the red chili pepper (optional), set aside
- Crack the eggs into a bowl and beat until smooth to make the egg mixture
- Pour 5ml cooking oil into a hot pan
- When the oil is hot, reduce to low heat, pour in the beaten egg mixture, stir with chopsticks to separate, and stir-fry until the eggs set and are slightly yellow; this is soft-cooked eggs, remove and set aside
- Without washing the pan, add 5ml cooking oil, add the cucumber slices, and stir-fry over high heat for 1 minute
- Add the soft-cooked eggs back to the pan, season with 2g salt and 3ml light soy sauce, then immediately add the ham slices and chili bits (optional) and stir-fry evenly
- Turn off the heat and plate
Notes
