Golden Coin Eggs

Golden Coin Eggs are made by slicing boiled eggs and pan-frying them until golden, then stir-frying with green and red chiles and fermented black beans. Crisp outside and tender inside, savory with a mild heat, and shaped like ancient coins for good fortune. A quick, easy Hunan-style homestyle dish that goes great with rice.

Ingredients and Tools

  • xiaomi chili
  • doubanjiang
  • garlic
  • scallion
  • cornstarch (optional)
  • cooking oil
  • light soy sauce
  • oyster sauce
  • sugar

Measurements

  • eggs 5
  • cornstarch 40 g
  • cooking oil 20-35 ml
  • long green chili 15 g
  • xiaomi chili 6-15 g (about 2-5)
  • doubanjiang 15 ml
  • garlic 10 g (about 2-3 cloves)
  • scallion 3 g (about 1-2 stalks)
  • light soy sauce 15 ml
  • oyster sauce 15 ml
  • sugar 5 g

Steps

  • Put the eggs into cold water, bring to a boil over high heat, then reduce to low heat and cook for 8 minutes.
  • Rinse with tap water to cool, making them easier to peel.
  • Mince the garlic (particle size no larger than 1 mm), and dice the long green chili and xiaomi chili (about 2-3 mm).
  • Cut each cooked egg into 4 similar pieces along the short axis.
  • If coating with starch, coat each egg slice with starch and shake off excess starch.
  • Add 25 ml oil to the pan (if not coating with starch, add 20 ml), then add the egg slices.
  • Pan-fry until lightly golden, then add 10 ml oil (if not coating with starch, add 10 ml) and flip.
  • When the second side is lightly golden, add the long green chili, xiaomi chili, and minced garlic and fry for about 1 minute, then flip.
  • Then add doubanjiang and fry for several десятки秒, then flip.
  • Mix light soy sauce, oyster sauce, and sugar into a sauce, toss the pan gently, and then serve.

Notes

  • For the original flavor, 15 g is recommended; if you can’t handle heat, reduce to 6 g, and you can also remove the chili seeds.
  • A nonstick pan is recommended; when using a nonstick pan, you can reduce the initial oil by 5 ml.
  • Make sure the eggs are fully set before peeling.
  • Avoid over-stirring; they can fall apart easily.
