Tomato Scrambled Eggs

Tomato scrambled eggs is one of the most common home-cooked dishes in China. The ingredients are easy to find and the steps are relatively simple, so it is very suitable for beginner cooks and is often the first dish many people learn to make.

Ingredients and Tools

  • Tomatoes
  • Eggs
  • Cooking oil
  • Salt
  • Sugar (optional)
  • Chopped scallions (optional)

Measurements

  • Tomatoes = 1 piece (about 180g) * servings
  • Eggs = 1.5 pieces * servings, round up
  • Cooking oil = 4ml * eggs/piece
  • Salt = 1.5-2g * servings
  • Sugar = 0-2g * servings
  • Chopped scallions = 0-10g * servings

Steps

  • Wash the tomatoes
  • Optional: remove the tomato skins
  • Blanch the skins in boiling water, then put the tomatoes into cold water and peel off the skins
  • Remove the stems and cut into small pieces with sides no longer than 4cm, i.e., tomato pieces
  • Crack the eggs into a bowl, add 1g * servings of salt, and whisk until combined, i.e., egg mixture
  • You may add 1ml vinegar to the eggs, which can remove the odor and make the eggs fluffier
  • Heat the pan and add cooking oil
  • When the oil is hot, pour in the egg mixture. Stir-fry until the eggs set and turn slightly yellow, i.e., half-cooked eggs
  • Turn off the heat. Plate the half-cooked eggs and turn the heat back on
  • Note: do not wash the pan
  • Add the tomato pieces, pat and stir-fry with the spatula for 20 seconds, or until the tomatoes are soft
  • Add the half-cooked eggs back to the pan and stir-fry evenly
  • You may add 10ml ketchup and 50ml water to increase the sauce
  • You may also add other cooked meats and ingredients
  • Add the remaining salt, sugar (optional, if you prefer a sweeter version), and chopped scallions (optional), and stir-fry evenly
  • Turn off the heat and plate

Notes

  • Quick method:
  • Add the tomato pieces directly to the pan with the half-cooked eggs and stir-fry together until the tomatoes are soft
  • Continue with Step 10
