Pine Nut Corn

Ingredients and Tools

  • Corn kernels (sweet corn recommended)
  • Cooked pine nut kernels
  • Carrot (optional, for color)
  • Cooking oil
  • White sugar
  • Salt
  • Starch
  • Water

Measurements

  • Corn kernels 200 g (can use canned sweet corn or boil your own)
  • Cooked pine nut kernels 30 g
  • Carrot 50 g (cut into small dice, optional)
  • Cooking oil 15 ml
  • White sugar 10 g
  • Salt 1 g
  • Starch 5 g
  • Water 20 ml (for mixing the starch slurry)

Steps

  • Blanch the corn kernels and diced carrot for 1 minute in advance, remove and drain
  • Heat the pan with cool oil, stir-fry the diced carrot briefly, then add the corn kernels and stir-fry
  • Add white sugar and salt, stir evenly
  • Mix water and starch into a slurry, pour into the pan and quickly stir-fry until the sauce slightly thickens
  • Add the cooked pine nuts and stir-fry evenly
  • Plate and serve

Notes

  • Pine nuts can be dry-toasted over low heat until lightly golden and crisp for better flavor
  • When using canned corn, drain well first to avoid too much liquid during stir-frying
