Red-Braised Winter Melon
Red-braised winter melon is a homestyle dish with a glossy red color, savory aroma and flavor, and rich nutritional value.

- Winter melon
- Cooking oil
- Cooking wine
- Starch
- Light soy sauce
- Dark soy sauce
- Chicken bouillon
- Scallion
- Minced ginger
- Oyster sauce
Measurements
- Winter melon 300 g
- Cooking oil 50 ml
- Cooking wine 2 ml
- Starch 10 g
- Light soy sauce 10 ml
- Dark soy sauce 15 ml
- Chicken bouillon 3 g
- Scallion 0.5 root
- Minced ginger 1 piece
- Oyster sauce 15 ml
Steps
- Peel the winter melon and cut into small cubes with side length no more than 2 cm.
- Heat oil in a pan, add the winter melon, and gently turn-fry for 2 minutes until the surface turns golden.
- Remove the winter melon and set aside in a large bowl.
- Use the remaining oil in the pan, add minced ginger, light soy sauce, and oyster sauce in order, and stir-fry for 15 S.
- Pour the winter melon back in, stir-fry for 30 S, then add boiling water to cover the winter melon; boil over high heat for 10 minutes.
- Add dark soy sauce for color and continue cooking until the winter melon is soft (chopsticks can easily pierce the winter melon).
- Add chicken bouillon, cooking wine, and scallion, stir-fry for 30 S, then remove the winter melon to a large bowl.
- Keep the remaining broth in the pan, add starch slurry, bring to a boil, and pour the sauce over the winter melon.
