Hot and Sour Bracken Starch Noodles

Hot and sour bracken starch noodles are a simple, beginner-friendly cold dish that can be served as a main. The flavor is mainly hot and sour, and it takes about 10 minutes to make.

Ingredients and Tools

  • Bracken starch noodles
  • Chili oil
  • Soy sauce
  • Aromatic vinegar
  • Xiaomi chili (optional)
  • Garlic (optional)
  • Scallion (optional)
  • Salt
  • Sugar
  • A somewhat deep pot

Measurements

  • Soy sauce : vinegar : chili oil = 3 : 2 : 2 (the exact amount of sauce depends on how much noodles you have; this ratio is only to keep the flavor direction from going wrong)
  • If the sauce tastes a bit light, you can add 2 to 5 grams of salt
  • If you want the sauce to be more savory, you can add 2 grams of sugar

Steps

  • Add water to about 3/5 of the pot’s depth and bring to a boil
  • After the water boils, add the bracken starch noodles and simmer over medium-low heat for 8 minutes
  • Take out; make the sauce
  • According to the ratio, add soy sauce, vinegar, and chili oil
  • Dip with chopsticks and take a taste
  • If the soy sauce flavor is slightly strong at this point, add the prepared salt
  • If it doesn’t taste savory enough at this point, add the prepared sugar
  • Stir well until most granular seasonings dissolve; plating and finishing
  • Take a bowl
  • Add the sauce mixed in the previous step
  • Rinse the noodles under cold water, then put them into the sauce
  • Mix thoroughly
  • Chop the prepared scallion, garlic, and xiaomi chili and sprinkle over the noodles

Notes

  • Scallion, ginger, and garlic are extra seasonings; adding them enhances flavor, but it’s fine to skip
  • Sugar and salt depend on personal taste; the specific amount needed varies, add to taste
  • It is recommended to use a bowl for final plating, because using a plate makes it harder to eat the noodles
