Omurice

  • Milk (optional, makes the omelet more tender)

  • Carrot 30g
  • Sausage or chicken breast 50g
  • Corn kernels and green peas total 30g
  • Rice 200g
  • Ketchup 20ml
  • Cooking oil 15ml
  • Milk 10ml (mixed with eggs)

Steps

  • Dice the onion, carrot, and sausage or chicken breast, set aside
  • Heat the pan, add 10ml cooking oil, wait 10 seconds to heat
  • Add diced onion and stir-fry for 1 minute; once fragrant, add carrot, corn kernels, and green peas and continue stir-frying for 2 minutes
  • Add diced sausage or chicken breast, stir-fry until it changes color
  • Add rice and break it up; add 20ml ketchup, stir-fry evenly; fried rice is done, remove and set aside
  • Beat the eggs, add 10ml milk and mix well
  • Add 5ml cooking oil to the pan, pour in the egg mixture, gently swirl the pan to evenly coat the surface
  • Heat over low heat; when the surface of the egg is half-set, place the fried rice in the center of the egg
  • Use a spatula to fold the egg over the rice, forming an oval shape
  • Gently slide onto a plate with the spatula, tidy the shape, and optionally pipe a little ketchup on top as decoration

Notes

  • Using day-old rice makes it less likely to stick and improves texture.
  • Adding milk when beating eggs makes the omelet more tender.
  • Use low heat when handling the omelet to avoid burning the bottom.
