Lard Rice
Lard rice is a fallback for southern kids when they don’t want to eat. Crystal-clear grains of rice are coated in amber lard, while the savory soy sauce and the fresh fragrance of scallions dance on the tongue—each bite is a perfect symphony of carbs and fat.
Ingredients and Tools
- Rice (japonica rice recommended)
- Lard
- Light soy sauce (Lee Kum Kee or Haitian recommended)
- Dark soy sauce
- Oyster sauce (optional)
- Chopped scallions (optional)
- Lard cracklings (optional)
Measurements
- Rice 200 g
- Lard 15 g (reduce to 10 g when adding oyster sauce)
- Light soy sauce 5 ml (reduce to 3 ml when adding oyster sauce)
- Dark soy sauce 2 ml
- Oyster sauce 8 g
- Chopped scallions 0-12 g (initially recommend 5 g)
- Lard cracklings 5 g
Steps
- Spread lard at the bottom of the bowl
- Add rice
- Drizzle in soy sauces and oyster sauce
- Sprinkle on chopped scallions and lard cracklings
- Mix well
