Noodle Soup
Noodle soup is a basic staple loved by many. You can add any ingredients you like, making it nutritionally balanced with both solids and liquids. The ingredients are easy to get and the method is simple—if you have hands, you can do it.
Ingredients and Tools
- Noodle ingredients: can be handmade noodles, dragon beard noodles, noodle fish, or instant noodle cakes, vermicelli of various sizes, or any other noodle form you like.
- Vegetable ingredients: recommend a mix of meat and vegetables; choose your favorite ingredients and wash them. For example:
- Meat such as beef, lamb, fish, shrimp (raw or cooked)
- Eggs such as chicken, duck, goose, ostrich eggs
- Soy products such as tofu cubes, tofu skin, tofu sheets
- Lettuce, spinach, Chinese lettuce
- Vegetables such as green pepper, tomato, carrot.
Measurements
- Noodles: a single serving about the size of one instant noodle cake, choose between 70-230g.
- Cold water: add enough to cover the noodles, generally choose between 200 - 400 ml
- Vegetables: volume roughly equal to the noodles
- Leafy greens volume can be ignored
Steps
- First cut the vegetables into pieces with sides no longer than 4cm for easier cooking
- If using raw meat, put it into cold water, cover the pot, bring to a boil, skim off the surface scum, then turn off the heat and remove the half-cooked meat for later
- Bring the water to a boil over high heat, then reduce to medium heat
- Add harder-to-cook ingredients to the pot first (such as half-cooked meat, mushrooms, etc.). To ensure they are cooked, time 10 minutes after boiling; for especially hard-to-cook large pieces add 5 more minutes.
- Add the noodles to the pot, stir appropriately to ensure the noodles fully contact the broth, keep the surface at a gentle boil, and cook for 5 minutes. After adding noodles, white foam may form on the surface; you can slightly lift the lid to vent or remove the lid.
- Add easy-to-cook ingredients such as leafy greens, stir to fully submerge, and cook for 2-5 minutes
- Turn off the heat, then add salt, pepper, sesame oil, and other seasonings you like, stir appropriately, and serve
Notes
- The process can be adjusted to your preference; try more and you will be surprised
