Cola Fried Rice
Cola fried rice uses cola to replace sugar, bringing a caramelized, lightly sweet flavor. A lazy-person’s blessing—just a few simple steps to make uniquely textured fried rice, with silky eggs and a rich sauce; every bite is a surprise.
Ingredients and Tools
- Cooked rice
- Cola (sugared or sugar-free)
- Eggs
- Sausage (or luncheon meat, optional)
- Oil
- Light soy sauce
- Dark soy sauce
- Oyster sauce
- Doubanjiang (optional)
- Chopped scallions
- Pepper powder (white or black pepper)
Measurements
- Cooked rice 200 g
- Cola 160 ml
- Eggs 3
- Sausage 20-100 g
- Oil 25 ml
- Light soy sauce 15 ml
- Dark soy sauce 7.5 ml (if using sugar-free cola, add 5 ml; if not using doubanjiang, add 5 ml)
- Doubanjiang 7.5 ml
- Oyster sauce 5 ml
- Chopped scallions 5 g
- Pepper powder 1 g
Steps
- Heat the pan, add 25 ml oil, add two eggs, and fry until the bottoms are fully set.
- Flip and fry until both sides are fully set.
- Turn off the heat, remove the eggs, cut into 2-5 cm² pieces and return to the pan (or just break them up with a spatula).
- Turn the heat back on, pour in the cola, light soy sauce, dark soy sauce, doubanjiang, and oyster sauce; stir to combine.
- Heat until the liquid in the pan is reduced to 1/3, then add the rice and sausage and stir-fry.
- Once evenly stir-fried, turn to low heat, make a hole in the center of the food, crack in 1 egg, cover the pan, and simmer for 2 minutes.
- Uncover and stir-fry until the third egg is fully cooked; sprinkle with chopped scallions and pepper powder, then serve.
Notes
- Sugared cola tastes better.
- If you prefer it drier, stir-fry a bit longer.
- If you want to keep it simple, you can add all 3 eggs in the first step and skip the step of making a hole and cracking in another egg. If you follow this guide and find issues or steps that can be improved, please raise an Issue or Pull request.
