Stir-Fried Pork with Chili Peppers

Ingredients and Tools
- Green peppers (if you like spicy, use Hangzhou chili peppers or screw peppers; if you don’t like spicy, use pointed peppers or sweet peppers)
- Lean pork
- Salt
- Light soy sauce
- Oyster sauce
- Garlic
- Ginger
- Soy sauce (optional)
- Fermented black beans (optional)
Measurements
- Amount of green peppers = servings * 3 pcs.
- Meat amount = servings * 200g.
- Salt amount = servings * 3g.
- Light soy sauce = servings * 3ml.
- Oyster sauce = servings * 3ml.
- Garlic = servings * 5g.
- Ginger = servings * 5g.
- Soy sauce = servings * 2ml.
- Fermented black beans = servings * 3g. Use the above conditions to calculate the proportion of the planned ingredients.
Steps
- Wash the green peppers, remove the stems and seeds, then cut into pieces using a rolling cut and set aside.
- Smash the garlic with a knife, then slice into cloves; mince the ginger into ginger mince.
- Slice the lean pork (cut along the grain of the pork, i.e., the knife and the grain form a horizontal line; the resulting slices show a “川” pattern).
- Wash the sliced pork, put into an empty bowl, then add the calculated light soy sauce, oyster sauce, and salt, mix well, and marinate for 10 minutes.
- Heat the pan without oil, add the cut green peppers, and stir-fry over high heat until blistered; then add 2g salt and continue stir-frying for 1 minute, then remove.
- Without washing the pan, heat over high heat, add servings * 8ml oil, wait 30s, add garlic cloves and ginger mince, stir-fry for 15s.
- Add the marinated pork and stir-fry for 2 minutes, then add the dry-fried green peppers and stir-fry for 1 minute.
- Add fermented black beans according to personal taste, finally add soy sauce, and continue stir-frying for 30s.
- Serve and plate.
