Measurements
- pork belly 500g
- chaotian chili 4 strips
- xiaomi chili 4 pieces
- fermented black beans 10g, adjust to taste ±5g
- doubanjiang 10g, adjust to taste ±5g
- dark soy sauce 10ml
- starch 10g
- salt 1-2g
- scallion 0.5-1 stalk
- garlic 2 cloves
- cooking oil 15ml
Steps
- Slice the pork belly
- Put the meat in a bowl, add starch, dark soy sauce, and salt, mix well and marinate for half an hour
- Cut the scallion into segments
- Slice the xiaomi chili and chaotian chili on a bias
- Heat the pan, add oil
- After the oil is hot, add the pork belly and stir-fry. Stir-fry until the color changes, then remove
- Add garlic to the pan, stir-fry until fragrant, add fermented black beans, and stir-fry evenly
- Add doubanjiang and stir-fry evenly
- Add the stir-fried pork belly and continue to stir-fry evenly
- Add xiaomi chili, chaotian chili, and scallion segments and stir-fry for 40 seconds
- Plate and serve.
