Measurements

  • pork belly 500g
  • chaotian chili 4 strips
  • xiaomi chili 4 pieces
  • fermented black beans 10g, adjust to taste ±5g
  • doubanjiang 10g, adjust to taste ±5g
  • dark soy sauce 10ml
  • starch 10g
  • salt 1-2g
  • scallion 0.5-1 stalk
  • garlic 2 cloves
  • cooking oil 15ml

Steps

  • Slice the pork belly
  • Put the meat in a bowl, add starch, dark soy sauce, and salt, mix well and marinate for half an hour
  • Cut the scallion into segments
  • Slice the xiaomi chili and chaotian chili on a bias
  • Heat the pan, add oil
  • After the oil is hot, add the pork belly and stir-fry. Stir-fry until the color changes, then remove
  • Add garlic to the pan, stir-fry until fragrant, add fermented black beans, and stir-fry evenly
  • Add doubanjiang and stir-fry evenly
  • Add the stir-fried pork belly and continue to stir-fry evenly
  • Add xiaomi chili, chaotian chili, and scallion segments and stir-fry for 40 seconds
  • Plate and serve.
