Coca-Cola Chicken Wings

Ingredients and Tools

  • chicken mid-wings
  • Coca-Cola
  • white sugar
  • light soy sauce

  • cooking wine or beer
  • scallion

Measurements

  • chicken wings 10 ~ 12
  • Coca-Cola 500ml
  • white sugar 10 g
  • light soy sauce 15 g
  • dark soy sauce 3 g
  • salt 2 g
  • ginger 2 slices
  • cooking wine 20 ml
  • scallion tied into a knot

Steps

  • Add the chicken wings to the pot and pour in cold water to cover. Add 1 slice of ginger and 10 ~ 20 ml cooking wine. Bring to a boil over high heat (about 2 minutes), skim off the foam, and drain the water.
  • This step is for chilled chicken wings. For just-bought wings, simply score them and marinate with light soy sauce.
  • Remove the wings and use a knife to score two cuts on each side. Marinate with about 10 g light soy sauce for 10 minutes (as long as the soy sauce fully coats the wings so they absorb flavor).
  • Reheat the pot with oil over low heat, first stir-fry the remaining ginger slices until fragrant, then add the marinated wings. Pan-fry until golden, flip (until both sides are golden), then stir the wings with a spatula together with the ginger 4~5 times (to prevent the wings and ginger from sticking).
  • When the wings are golden, pour in Coca-Cola to cover the wings, turn to high heat and bring the Coca-Cola to a boil, then skim off the floating black foam (including blood). Add the scallion knot at this time.
  • Seasoning: add 2 g salt, 10 g white sugar, and 3 g light soy sauce (you can add 3 g dark soy sauce to adjust the color).
  • When the scallion knot turns yellow, remove it together with the ginger, and continue to simmer the Coca-Cola chicken wings over medium heat.
  • When the Coca-Cola reaches a stringy, syrupy state, turn to low heat to let the sauce firmly coat the wings. Turn off the heat, plate, and serve.

Notes

  • Adding ginger and stir-frying until fragrant also helps prevent the wings from sticking.
  • Do not use overly high heat when reducing the sauce at the end to avoid a bitter taste.
