Winter Melon Tea
Winter melon tea is a refreshing traditional drink; beginners generally need 4~5 hours to complete.

- winter melon
- rock sugar
- plastic wrap
- strainer
- large pot

- winter melon 1000g
- rock sugar 300g
Steps
- Prepare the winter melon: peel, remove seeds, and cut into small pieces (each piece no larger than 4cm).
- Add rock sugar: add rock sugar to the winter melon, mix evenly, cover with plastic wrap, and refrigerate for more than 2 hours.
- Cook the winter melon: by now the winter melon has released a lot of liquid; pour into the pot, bring to a boil over high heat, then reduce to medium-low heat and simmer for 1~2 hours, stirring often to prevent sticking.
- Strain the winter melon tea: use a strainer to filter the cooked winter melon tea liquid, remove the winter melon pieces, and keep only the tea liquid.
- Cool: let the winter melon tea liquid cool, then pour into a clean container and refrigerate.
- Enjoy: the cooked winter melon tea liquid is a concentrate; dilute with water or other drinks to taste, and serve hot or cold.
Notes
- Taste adjustment: the amount of rock sugar can be adjusted to achieve your preferred sweetness.
