Winter Melon Tea

Winter melon tea is a refreshing traditional drink; beginners generally need 4~5 hours to complete.

Ingredients and Tools

  • winter melon
  • rock sugar
  • plastic wrap
  • strainer
  • large pot

  • winter melon 1000g
  • rock sugar 300g

Steps

  • Prepare the winter melon: peel, remove seeds, and cut into small pieces (each piece no larger than 4cm).
  • Add rock sugar: add rock sugar to the winter melon, mix evenly, cover with plastic wrap, and refrigerate for more than 2 hours.
  • Cook the winter melon: by now the winter melon has released a lot of liquid; pour into the pot, bring to a boil over high heat, then reduce to medium-low heat and simmer for 1~2 hours, stirring often to prevent sticking.
  • Strain the winter melon tea: use a strainer to filter the cooked winter melon tea liquid, remove the winter melon pieces, and keep only the tea liquid.
  • Cool: let the winter melon tea liquid cool, then pour into a clean container and refrigerate.
  • Enjoy: the cooked winter melon tea liquid is a concentrate; dilute with water or other drinks to taste, and serve hot or cold.

Notes

  • Taste adjustment: the amount of rock sugar can be adjusted to achieve your preferred sweetness.
