Sizzling Eel Shreds is a classic Jiangsu-Zhejiang-Shanghai style dish. The eel shreds are fresh, tender, and smooth, seasoned with garlic, minced ginger, and sauce. Hot pork lard is poured over for a burst of aroma. The flavor is rich with a slight sweetness—perfect with rice.

  • garlic 40 g
  • minced ginger 20 g
  • cooking wine 13 g
  • light soy sauce 3 g
  • oyster sauce 2 g
  • dark soy sauce 2 g
  • table salt 2 g
  • white sugar 6-15 g
  • white pepper 3.5-8 g
  • starch 10 g
  • water 50 g
  • minced garlic 40 g
  • chopped scallions 15 g
  • pork lard 20 g

Steps

  • Cut the eel into three sections, then slice into thin shreds
  • Add 0.5 g white pepper and 3 g cooking wine, mix well, then add 5 g sesame oil to marinate
  • Heat oil to coat the wok
  • Add vegetable oil and heat to 60% hot
  • Add half of the minced garlic and all of the minced ginger, stir-fry a few times
  • Add the eel shreds and stir-fry over medium heat for 30 seconds
  • Pour 10 g cooking wine around the edge and stir-fry a few times
  • Add light soy sauce and stir-fry evenly
  • Add oyster sauce and dark soy sauce, stir-fry a few times
  • Add table salt, white sugar, and 3 g white pepper, stir-fry evenly
  • Mix starch and water into a slurry, pour into the wok, and reduce until thickened
  • Plate, sprinkle with minced garlic and chopped scallions
  • Heat another wok, add pork lard, heat to 70% hot, and pour over the eel shreds

Notes

  • Do not wash the eel blood too clean, otherwise the eel easily turns black and smelly
  • You can ask the vendor to help slaughter the eel
  • You can add more white pepper and white sugar to help remove fishiness and enhance aroma
